Clucky's Apple Pie

Apple Pie  Slice 6-8 Cortland or other pie apples into the bottom crust (crust recipe below) in a pie tin, until apples are piled high. 1/2-3/4 c. white or brown sugar (I use white.) 1 Tbl. flour 1/4 tsp. salt 1/3 tsp. cinnamon 1/4 tsp. nutmeg Mix together and spread over top of apples Dot with butter. Cover with top crust. Bake at 450 degrees until apples in center are tender, about 40 minutes.   (Test by sticking a sharp knife or cake tester through a slit.)   If crust browns too quickly, turn down heat.   Heat can be turned down after 15 minutes to accommodate other recipes, if needed.   Pie Crust for 2 crusts 2 c. flour 1/2 tsp. salt 1/2 tsp. baking powder 2/3+ c. shortening 1/4+ c. cold water Mix flour, salt & baking powder.   Add a generous 2/3 cup of shortening (i.e., an extra 1-2 Tbl.).   With your fingers rub shortening and flour together until mixture is the texture of cornmeal.  Add cold water, mixing lightly with

Clucky's Pumpkin Pie

Pumpkin Pie  1 and 3/4 cups mashed pumpkin 3/4 cup sugar 1 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. ginger 1/4 tsp. nutmeg 1 egg 1-1/2 cup milk (evaporated or part cream) Mix well.  Spoon into unbaked pie crust. Bake at 450 degrees for 10 minutes, then at 300 degrees for 45-50 + minutes (or a slightly higher temperature).

Finnish Pancakes (according to Clucky fed 13 people who ate every morsel) FINNISH PANCAKES from Deb Emmett, former Kitchen Manager at Swift River School via Clucky makes 1 10x14 casserole pan 450 degrees for 20 minutes 8 eggs 1 quart milk 4-5 Tabl. sugar 1 tsp salt 1 cup flour 1/2 cup butter (1 stick) Melt butter in pan. Mix eggs and milk lightly. Add sugar, salt and flour and mix. Pour mixture over melted butter. Bake at 450 degrees for 20 minutes. Serve with maple syrup, jelly and/or butter.

Grammy's Harvest Bread

Harvest Bread (another Grammy classic) 1 c canola oil 2 c sugar 4 eggs 1 can pumpkin (smaller size) 2 ½ c flour 2 t baking soda 2 t cinnamon 1 t salt 1 t nutmeg ½  t ginger (optional) ½ t cloves (optional) 1 ½ c chocolate chips 1 ½ c chopped walnuts (optional) Cream oil, sugar and eggs together. Add in pumpkin. Add in dry ingredients (flour through spices). Stir in chocolate chips and nuts. Grease and sugar 2 loaf pans. Pour in batter and bake at 350 for one hour. Cool loaves for ten minutes and remove from pans. Cool further on wire rack. Optional topping: Mix 1 c confectioners sugar and sprinkle of cloves and ginger. Stir in milk to make glaze. Spread on top of loaves.
